Beef Stroganoff

Beef Stroganoff

Ingredients

1 pound lean beef (top round)
3 teaspoons vegetable oil
3/4 tablespoon finely chopped onion
1 lb. sliced mushrooms
1/4 teaspoon salt
Pepper, to taste
1/4 teaspoon nutmeg
1/2 teaspoon dried basil
1/4 cup white wine
1 cup plain low-fat yogurt
6 cups macaroni, cooked in unsalted water

Directions

Firstly cut beef into 1 inch cubes. Heat 1 teaspoon of oil in a non stick skillet, then Sauté the onions for 2 minutes. Add the beef next and sauté for an additional 5 minutes, to give it an evenly brown colour. Remove from pan and then keep hot. Add the remaining oil to the pan and sauté the mushrooms. Next add the beef and onions to the pan with the seasoning. Add the beef broth and yoghurt and gently stir. Heat this, but do not boil. Lastly serve with the macaroni.
